“Kibudo Jam” has a rich and delicious taste of Crimson glory vine. The skins and pulps are cooked together and then strained through a sieve to produce grape puree. Coarse crystal medium soft sugar from Tanegashima is added to the puree for thickening. Its sauce-like texture with natural sourness with low sugar contents below 45 degrees can be consumed in many ways of your choice.

Puree of Crimson glory vine and apple puree are mixed to obtain a nicely balanced flavor and texture. Its unique taste is created by a good combination of sweetness and sourness from both fruits. Oligosaccharide is used for the mixed puree to produce a desired consistency with low sugar contents below 45 degrees. Due to the presence of apples, the jam is thicker than “Kibudo Jam” in texture, but mild in taste.

Crimson glory vine puree “Yama-no-Kibudo Puree”

Non-sugar puree made from Crimson glory vine harvested in Iwate prefecture

To produce the puree, we first cook whole berries of Crimson glory vine and age them for a sufficient period of time, followed by removing the seeds and mashing by grinding. The “100% Crimson glory vine food” thus produced is nutrient-dense and gives a rich taste and flavor. The puree has a high content of polyphenol, more than 3 times as much as that of “Yama-no-Kibudo.” Being sugarless, the puree offers a variety of application for professional uses.
